Every dish at Fumizen is prepared using carefully selected ingredients and time-tested recipes based on decades of culinary expertise. This has earned us a strong reputation and loyal following among discerning diners.

Internationally, we’ve expanded with franchise locations in Cambodia and the Philippines since 2020. Currently, three Fumizen restaurants are in operation:

We began franchising in 2019 out of a desire to share the rich culture of tonkatsu and Japanese cuisine with the world. Since then, we have opened a street-front shop in Quezon, Manila, and a main hotel restaurant in Siem Reap, Cambodia.
Our first strength is our uncompromising commitment to quality and taste. We take great pride in delivering authentic Japanese cuisine and tonkatsu, using carefully selected ingredients and recipes refined over decades. When local sourcing alone cannot meet our standards, we establish supply systems to procure ingredients directly from Japan and neighboring countries. Our second strength is our flexibility in localization. We respect the preferences of each market, customizing menus to suit local tastes without being bound to Japan’s flavor profile. This could mean introducing popular Japanese dishes like eel or gyoza, or creating unique items such as colorful roll sushi or spicy hot pots—options not served in our domestic locations.

Diverse Menu and Localization

While tonkatsu is a dish made by deep-frying pork coated in breadcrumbs, it's also delicious and pairs well with other meats like beef, chicken, and even seafood such as shrimp and scallops.
Additionally, our head chef has a wide range of experience, offering traditional Japanese dishes beyond tonkatsu, including sashimi, sushi, and shabu-shabu hot pot.
Considering local preferences, we also provide recipes for unique menu items not yet available in Japan. These include popular Japanese dishes like eel (unagi) and gyoza, as well as localized creations such as colorful roll sushi and spicy hot pots.

Menu Offerings to Expand Sales

The exquisite tonkatsu offered at "Fumizen" can be enjoyed freshly prepared in-house, but it's also delicious as a bento (lunchbox) for takeout, maintaining its great taste even when eaten later. For example, our tonkatsu bentos have been delivered to Japan's National Diet (parliament) for many years. Additionally, our katsu-sando, a popular sandwich made with tonkatsu, is easy to eat on the go. We offer diverse sales and revenue opportunities not only through in-house dining but also by providing an extensive range of takeout and delivery menus.
